i have no idea
let me take a guess
H = Hong I = Interactive K = Kong

i think it's supposed to indicate a large ROM size.. i've also seen it written as High-K, and some older carts would have the size in "K" (kilobits rather than bytes most probably). so it'd be "high kilobits"
some of my stuff: twitter // super multi // handheld underground

When I saw "K," I always thought Shin-Shin Electronics Co., Ltd., whose symbol seems to be "K." I didn't think of it as a reference to the ROM size. But I think you may have solved it. I've never seen another likely answer. It also seem possible that it's got something to do with Hong Kong.

EDIT: I've just seen a label with "HI-K" on it, which would be the missing link, so to speak, in the evolutionary chain.

K >> High-K >> HI-K >> HIK ---maybe there's a Hi-K somewhere out there.

Anyone think Hi-Game is a part of this equation. For a while it seems we've treat "Hi-Game" as if it were the name of a company, but isn't it more logical that it's an extension of the K equation?

K >> High-K >> HI-K >> HIK >> Hi-Game? ---maybe there's a Hi-K somewhere out there.
